  • 4 cups chicken broth

  • Water, as needed

  • 2 bay leaves

  • 1 tsp dried thyme

  • 1 tsp smoked paprika

  • 1½ tsp black pepper

  • ½ tsp cayenne pepper (optional)

  • 1½ tbsp Worcestershire sauce

  • 1½–2 tbsp Louisiana-style hot sauce

  • Salt, to taste

Finishing

  • 3–4 tbsp butter

  • 2 cups uncooked long-grain white rice

  • Green onions or parsley, for garnish (optional)

👨‍🍳 Instructions

1. Prepare the Beans

For best results, soak the dried beans overnight in plenty of water. Drain and rinse.

Place the beans in a large pot, cover with fresh water, and bring to a vigorous boil.

Boil for at least 30 minutes, then drain.

Important: Dried red kidney beans contain a natural toxin that must be destroyed by proper boiling before slow cooking. Do not put raw or merely soaked kidney beans directly into the slow cooker.

2. Prepare the Holy Trinity

Heat 1 tbsp butter or oil in a skillet over medium heat.

Add the diced onion, bell pepper, and celery. Sauté for approximately 5–7 minutes, until softened.

Add the minced garlic and diced ham. Cook another 1–2 minutes, stirring frequently.

Transfer everything to the bottom of the slow cooker.

3. Add the Beans & Seasonings

Add the boiled and drained beans to the slow cooker.

Stir in:

  • 3 bay leaves

  • 1 tsp dried thyme

  • 1 tsp smoked paprika

  • 1½ tsp black pepper

  • ½ tsp cayenne pepper, if desired

Pour in the 4 cups of chicken broth.

Add only enough additional water to keep the beans just submerged. Avoid adding excessive liquid — the slow cooker retains most of its moisture, and we want the finished beans thick and creamy.

Do not add salt, Worcestershire sauce, or hot sauce yet. We'll add those after the beans have softened.

4. Slow Cook

Cover and cook on LOW for approximately 7–9 hours, or until the beans are completely tender and creamy inside.

Cooking time varies depending on the beans and slow cooker.

The beans should mash easily with a fork before moving to the next step

5. Make the Beans Creamy

Once the beans are completely tender, remove approximately 1–1½ cups of beans with a little cooking liquid.

Mash thoroughly with a fork or potato masher, then stir the mashed beans back into the slow cooker.

This creates the thick, creamy consistency that makes great red beans and rice.

If the mixture is too soupy: Ladle out 1–2 cups of excess liquid and reserve it in a bowl. You can add some back later if needed.

6. Add Worcestershire & Hot Sauce

Stir in:

  • 1½ tbsp Worcestershire sauce

  • 1½ tbsp Louisiana-style hot sauce

Taste after 15–20 minutes and add additional hot sauce if desired.

7. Brown the Smoked Sausage

Heat a large skillet over medium-high heat.

Brown the sliced smoked sausage in two batches, approximately 6–8 minutes per batch.

Allow the sausage to develop browned, slightly crispy edges rather than simply heating it through.

Stir the browned sausage into the slow cooker.

Cover and continue cooking on LOW for another 20–30 minutes to bring the flavors together.

8. Prepare the Rice

While the sausage finishes cooking, prepare 2 cups of uncooked long-grain white rice according to package instructions.

Fluff with a fork when finished.

9. Finish & Adjust

Taste the beans and adjust seasoning.

  • Too thin? Mash another ½–1 cup of beans and stir them back in.

  • Too thick? Add a splash of reserved cooking liquid or chicken broth.

  • Needs more flavor? Add additional black pepper or hot sauce.

  • Needs salt? Add a little at a time, remembering that the broth, ham, and sausage already contain salt.

Stir in 3–4 tbsp butter for a rich, silky finish.

Remove bay leaves.

10. Serve

Spoon the creamy red beans and smoky sausage generously over a bed of fluffy white rice.

Garnish with green onions or parsley, and serve with additional hot sauce if desired.

💡 Tips for Better Red Beans & Rice

Don't skip the bean boil. Dried kidney beans must be properly boiled before going into a slow cooker.

Brown the sausage separately. Adding it toward the end keeps its texture and produces better flavor.

Be conservative with the water. Slow cookers don't allow much evaporation. Start with just enough liquid and add more only when needed.

Mash the beans for thickness. This gives the dish its signature creamy consistency without flour or cream.

Add acidic sauces later. Waiting until the beans are tender before adding Worcestershire and hot sauce helps avoid interfering with softening.

Don't salt too early. Taste the finished dish before adding salt, particularly when using seasoned meat and broth.

Make extra. Like chili, red beans and rice often taste even better the next day.

🧊 Storage & Reheating

  • Refrigerator: Store in airtight containers for 3–4 days.

  • Freezer: Freeze for up to 3 months for best quality.

  • Reheating: Warm gently with a little chicken broth or water to restore the creamy consistency.

Cool and refrigerate promptly. Store the rice separately for the best texture.

Serving suggestion: Add a side of warm buttered cornbread and a bottle of your favorite Louisiana hot sauce for a satisfying Southern-style dinner.
