Homemade Dressing
1/2 cup vegetable oil
1/2 cup red wine vinegar
2 teaspoons salt
1 teaspoon dried tarragon
1/2 teaspoon black pepper
1 clove garlic, crushed
Instructions
Prepare the vegetables. Drain the canned green beans and sliced water chestnuts. Thinly slice the purple onion.
Combine the ingredients. Place the whole green beans, sliced onion, and water chestnuts in a large mixing bowl.
Prepare the dressing. If making the homemade dressing, combine the vegetable oil, red wine vinegar, salt, dried tarragon, black pepper, and crushed garlic in a small bowl or jar. Mix or shake thoroughly until well combined.
Dress the salad. Pour the homemade dressing over the vegetables and gently toss to coat evenly. Alternatively, use enough bottled Italian dressing to coat the vegetables.
Chill. Cover and refrigerate for 2–3 hours before serving to allow the flavors to blend.
Serve. Gently toss again before serving. Enjoy chilled.
