Ingredients

Potatoes and Cheese Sauce

  • 8 potatoes

  • 4 tablespoons butter

  • 4 tablespoons all-purpose flour

  • 1 teaspoon salt

  • 3 cups milk (see note below)

  • 2 teaspoons prepared mustard

  • 1 teaspoon Worcestershire sauce

  • 2 cups grated cheddar cheese

Buttery Cracker Topping

  • 4 tablespoons coarse cracker crumbs (Ritz or similar)

  • 3 tablespoons melted butter

Instructions

1. Cook the potatoes. Place potatoes in a large pot of water and boil until tender. Drain and allow to cool slightly before cutting into slices.

2. Prepare the cheese sauce. In a large saucepan over medium heat, melt 4 tablespoons of butter. Add the flour and stir until well combined and bubbly.

3. Add the seasonings. Gradually stir in the milk, Worcestershire sauce, prepared mustard, and salt. Continue stirring until the mixture comes to a boil.

4. Thicken the sauce. Allow the mixture to boil for 1 minute, stirring constantly to prevent lumps or scorching.

5. Add the cheese. Reduce the heat and stir in the grated cheddar cheese until melted and smooth.

6. Assemble the potatoes. Preheat the oven to 325°F. Arrange the sliced, cooked potatoes in a 9 × 13-inch baking dish. Pour the cheese sauce evenly over the potatoes.

7. Prepare the topping. Combine the coarse cracker crumbs with 3 tablespoons of melted butter. Sprinkle evenly over the potatoes.

8. Bake. Bake uncovered at 325°F for 30–60 minutes, or until the sauce is hot and bubbly and the topping is lightly golden.

9. Serve. Remove from the oven and let stand briefly before serving.

Recipe note: The original recipe lists 3 cups of milk with a reminder to verify the measurement. Three cups is a reasonable amount for this quantity of potatoes and cheese sauce, but the original measurement has not been independently confirmed.
